Hyderabadi Dum Biryani...

Hyderabadi Dum Biryani

Ingredients :-
 - Chicken 1 Kg
 - Basmati Rice - 1/2 Kg
 - Onion - 2 Big
 - Lime Juice - 1/4 cup
 - Curd 500 gms
 - Ginger Garlic paste - 4:6 tsp
 - Red Chili Powder - 1/2 tsp
 - Green Chili - 4:6 (Grind to fine paste
 - Shahi Zeera - a pinch
 - Clove - 1:2
 - Cinnamon - 1:2
 - Cardamom - 1:2
 - Coriander Leave - A bunch finely chopped
 - Mint Leave - 8:10 sticks
 - Saffron - 2 pinch (with water)
 - Saffron color - a pinch (liquefied with water)
 - Ghee - 2 tsp
 - Oil - 2 cup
 - Salt - According to taste

Method :
Cut the meat into square pieces of 4 inches each and wash them. Add Ginger-Garlic past to it and marinate if for an hour.
Meanwhile cut onion into thin strips length wise and fry the onion in the oil on a low flame till it become golden brown.
Remove the the golden brown onion form the oil and spread it onto a plate. When it cool down crush then with your hand.
Then add 3/4 of the crushed onion, red chili powder, green chili paste, cinnamon  cardamon, shahi zeera, clove, coriander leave, mint leave and saffron water, salt and remaining part of the oil into marinated meat. Leave if for an hour.

After an hour take basmati rice, wash it and pour water into it as you cook it, add salt, one tsp of cinnamon, cardamom, shahi zeera, clove, coriander leave, mint leave and two green chili cut length wise.

Now put on flame till the rice becomes half cooked. Remove from the flame and drain-out the water completely and spread this half cooked rice on the marinated meat. upon the rice layer spread lime juice, saffron color, ghee and remaining part of crushed onion.

Cover the utensil with a lid tightly, keep it on a very low flame. After 1/2 hour remove it from the flame.

 Your BIRYANI is ready to be served!!!
